today we are having baked potatoes for dineer, pretty easy. just bake potatoes and add toppings. we like chili, lettuce, sour cream, cheese. top with what you like. I do have a recipe that was on a coupon blog site that looks really good I'm going to try it. Go to moneysavingmom.com and look for Glazed Cinnamon Scones, you'll have to go back to older posts or search. I am also going to post other blogs that I follow for coupons. I hope you find use in them, I do.
I had a very good friend from high school write me today and ask about freezer meals, so next week I will be letting you know how I do freezer meals and hopefully buy next weekend I will be doing some myself. So keep looking for that and other recipes to try.

Last night's dinner was a lot of fun. i had pitas that I was wanting to make tuna pitas, but realized i had no mayo. So instead I turned them into pizzas. The boys loved them! I just took a can of Italian tomatoes and mixed it with a can of tomato sauce and put some italian seasoning and salt and pepper for the sauce then put olives left over turkey suasage and cheese. Bake at 350 until cheese is melted. Turned out very yummy and much less fat than traditional pizza.

Italian Turkey Sausage with penne
cook 1 box penne pasta (we use multigrain or whole wheat)
saute:
mushrooms, green/red peppers, onions
cook italian turkey sausage whole, slice after
(comes in a package of 5 large links I used 3)
put pasta in bowl drizzle with olive oil (about 1/4 cup)
add italian seasoning (about 2 tsp.)
a little salt and pepper
add sauteed veggies and sausage and one can olives (i didn't slice)
add about 1 cup italian blend cheese or mozzerela cheese
stir together and serve warm
we had this as the main dish and then had oranges and mixed veggies on the side.
this makes a big bowl. enough to feed at least 8, so adjust how you need to for your family.
New Year New ME!
I decided to start a blog to let everyone know what we are up to and also to start something this year. I am setting some goals for the new year and want to stick to it. So I need someone to be accountable to besides my husband. This gives me the opportunity to be accountable to you,
everyone.
My goals for the year are to:
1. lose weight
2. get into shape and stay in shape
3. eat mote healthy
4. spend less on groceries and necessities
5. enjoy my kids more
Most of you know that I love to coupon shop and find the best bargain. I have realized that I kind of go over board sometimes, so I am going to try to limit spending and save some money. I get a lot for my money but still spend a lot on groceries. I also love to cook and come up with new creations in the kitchen with ingredients in the fridge and in the pantry. I want to post a couple recipes a week for you to try and give me your opinion. I also love to make freezer meals. That is my time with the love of my life, Mike. We love to cook together and freezer meals are our favorite, as well as canning. I want to start making freezer meals more so I can cook less. I can post recipes for some of those too.
